Ingredients
4 garlic cloves, minced
1 tbsp red or white onion, chopped
1 red chili peppers (careful with thai red chili, they are spicy so use 1), chopped
1 tsp red chili flakes
1/4 cup white vinegar (you can add more, as needed)
2 tbsp mirin or rice vinegar
3 tbsp water
1 tbsp sugar (or more to taste)
Instructions
Chop your garlic, onion, and chilis as small as possible. Add to a bowl and set aside.
In another small bowl, mix vinegar, sugar, and water until sugar is dissolve. Add this mix to the bowl with the garlic, onion, and chili and mix well. Taste and check if it needs more sugar or vinegar (in case of spice level). Lastly add the chili flakes and mix well.
Once all of the ingredients are incorporated well, add the mix to a fridge until serving time.
Note: this sauce can last up to 1 week. It will get stronger and more sour as the days go.
