Cook time: 35-40 minutes
Ingredients:
-1 cup vital wheat gluten
-2 tbsp nutritional yeast
-2 tsp smoked spanish paprika
-2 tsp onion powder
-1 tsp garlic powder
-3/4 cup water
-2 tbsp tahini or other nut butter
-1 tbsp soy sauce
*Glaze:
-1/3 cup vinegar
-2/3 cup soy sauce
-1 tbsp brown sugar
-1 tsp garlic powder
-1 tbsp sesame oil
-1 tsp cornstarch in 1 tsp of water
-sesame seeds to garnish
Directions:
Preheat the oven to 350F.
Mix the ingredients together, stir well and knead lightly in the bowl for about 30-60 seconds (the less you knead, the more tender it is).
Put the dough into a baking dish and flatten it to fill the pan. Take a sharp knife and cut the dough into thin strips that resemble spare ribs. Put in the oven and bake for 25 minutes.
In a mixing bowl, mix your glaze ingredients together and set aside.
Once done, remove from the oven and re-cut each strip, going over each cut to make sure that the "ribs" will pull apart easily later. Generously brush them with the glaze and put bac in the oven to roast for another 10-15 minutes. If using a grill, cook the "ribs" for about 10-20 minutes until a nice sear is formed. Glaze as needed.
When done, plate your "ribs" and garnish with sesame seeds, pull apart and enjoy!
