Ingredients:
kale: 1
100g baby spinach
60g dried tomatoes
1 can chickpeas
2-3 medium/large fresh tomatoes
2-3 tbsp. spicy olive oil
croutons (optional)
Directions
Wash the veggies and cut them into bite-size pieces. You can leave the baby spinach as it is if the leaves aren’t too big.
Drain the chickpeas and wash them with clean water.
Add all the ingredients in a large salad bowl and give then a little mix. Pour the spicy olive oil on top and mix again until all the ingredients are properly coated. Serve as the main dish or as a side.
