Makes 48 cookies
Ingredients:
-2 cups/240g all-purpose flour
-2 tsp/ 8g baking powder
-3/4 tsp salt
-1 3/4 cups/ 350g white granulated sugar
-1/2 cup/ 120 mL vegetable oil
-1 cup/ 120g cocoa powder
-4 large eggs, room temperature*
-2 tsp/ 10 mL vanilla extract
-1 cup/100 g powdered sugar
*Vegan: can use vegan alternatives
Directions:
In a large bowl, sift together the flour, baking powder, and salt. Whisk and set aside.
Add the oil and sugar to another mixing bowl and mix until combined. Add the cocoa powder and mix.
Add the eggs and vanilla in, then mix until well combined.
Dump the flour mixture in and mix. Scrape the bowl down and mix until combined.
Cover in plastic and refrigerate overnight or for at least 4 hours.
Preheat oven to 350F/180C. Use a tablespoon to scoop out the chilled dough and roll into roughly one-inch balls.
Roll dough in powdered sugar and place on parchment-lined baking sheet, about 2 inches apart.
Bake for 10-12 minutes at 350F/180C. The cookies' edges will be set but the center will finish baking in the oven.
Take them out, let them set, and enjoy!
