Ingredients
-1 english cucumber
-1 can of tuna, drained
-2 tbsp kewpie mayo or your choice of mayo
-1-2 tbsp chopped onion
-1 tsp sesame seeds
-salt and pepper, to taste
-1/2 cup cooked white rice (optional)
Directions
Combine tuna with your choice of mayo, along with the chopped onions, salt and pepper. If you have a go-to tuna salad recipe, feel free to use it instead.
Take the cooked rice (preferably short grain or sushi rice) add the sesame seeds and mix well to incorporate thoroughly. Set aside.
Julienned the cucumber into thin long slices. You don't have to peel it.
Take the rice and create small cylinders or balls, depending on how you prefer it. Take the rice balls and wrap cucumber around it, making sure to wrap it nice enough but leaves space at the top with the tuna. Once done, add some of the tuna salad at the very top of the cucumber rice balls and serve. You can also just wrap the tuna salad without the rice.
Note: You can add more veggies, if you like, and top it with chives, paprika, or even egg roll.
