The Mckrokosmos (vegan)

Ingredients:

  • 1/2 cup plant/nut based milk

  • 1 tbsp vegan half and half or coconut cream

  • 2-3 tbsp ube jam (can use blueberry or blackberry)

  • 1/2 cup crushed candy

  • handful purple vegan chocolate chips or star sprinkles, for garnish (optional)


Purple galaxy sauce:

  • 1 cup granulated sugar

  • 1/3 cup water

  • 3/4 cup vegan heavy cream or coconut cream

  • 2 tbsp salted vegan butter

  • 1 tsp white food coloring

  • 3-4 drops purple food coloring


Directions:

Galaxy sauce:

  1. Add the sugar to a heavy bottomed saucepan then shake it so it lies in an even flat layer.

  2. Add the water to fully moisten the sugar. Place the pot over medium heat and cook until the sugar dissolves and turns clear, a few minutes. Raise the heat to medium high and cook the caramel until it turns amber colored, about 10 minutes. Turn off the heat and immediately add the heavy cream. It's okay if the caramel seizes up.

  3. Add the butter and stir everything together until the caramel smooths out. If it's still clumpy, turn the heat back on to medium. Add the food coloring and gently stir until it is smooth and turned to desired color. Let cool before using.


Assemble:

  1. In a bowl, combine the ice cream, milk, half and half, ube jam and crushed candy. Add to a tall cold cup, top with some more crushed candy and chocolate chips. Serve with straws and spoons. Enjoy!
