Ingredients:
-3 cups vanilla ice cream
-1/2 cup milk
-1 tbsp half and half
-2-3 tbsp ube jam (blueberry or blackberry)
-1/2 cup crushed candy bars or cookies (oreos, m&ms, nestle crunch, snickers, kitkats, etc...)
-handful purple chocolate chips or star sprinkles, to garnish (optional)
Purple galaxy sauce:
-1 cup granulated sugar
-1/3 cup water
-3/4 cup heavy cream
-2 tbsp salted butter
-1 tsp white food coloring
-3-4 drops purple food coloring (add more as desired)
Directions:
Add the sugar to a heavy bottomed saucepan, then shake it so it lies in an even, flat layer.
Add the water to fully moisten the sugar. Place the pot over medium heat and cook until the sugar dissolves and turns clear, a few minutes. Raise the heat to medium high and cook the caramel until it turns amber-colored, about 10 minutes. Turn the heat off and immediately add the heavy cream. It's okay if the caramel seizes up.
Add the butter and stir everything together until the caramel smooths out. If its still clumpy, turn the heat back on to medium, add the food coloring and gently stir for a few minutes until it's smooth and the color has turned purple, you can keep adding more until it reaches a desired color. Let the caramel sauce cool to room temperature before using.
Assemble:
-In a bowl, combine the vanilla ice cream, milk, half and half, ube jam, and crushed candy of choice and mix until thoroughly combined (the ice cream will change color from white to light purple). Add the ice cream to a tall, cold cup. Drizzle the galaxy caramel and top with some more crushed candy and chocolate chips. Serve with a spoon and straw and enjoy!
