INGREDIENTS
2 Ibs. flank or sirloin steak
3 tbsp olive oil
2 fresh limes, juiced
2 tbsp garlic, minced
2 tbsp chili powder
1 tsp cumin powder
1 tsp salt
1 tsp pepper
1 medium red onion, chopped
1/2 cup cilantro, chopped
Corn tortillas
DIRECTIONS
In a small bowl, stir together oil, lime juice, garlic, chili powder, cumin, salt, pepper, and sugar. Drizzle all over the steak and using your hands, press into the steak Let marinate for 30 minutes to 1 hour.
Chop the cilantro and red onion and mix to combine. Set aside for garnish.
Set pan on medium-high heat Carefully brush the pan with oil to prevent sticking. Once it is heated, place the steak on the pan and cook for 7-10 minutes per side. Remove the steak to a cutting board and let it rest for 5 minutes to allow the juices to settle. Thinly slice the steak Taste and add more salt if needed. Place steak on top of warmed corn.
Serve with cilantro and onion, top with queso cortija or feta cheese, and dice radishes if desired. Enjoy!
