Ingredients:
-smoked duck (chicken or tofu)
-lettuce (butter, romaine)
-cherry tomatoes, sliced
-red onions, sliced
-black olives, sliced
-1/2 cucumbers, julienne cut
*Dressing:
-1 tbsp apple cider vinegar
-2 tbsp olive oil
-1 tsp dijon mustard or spicy mustard
-1/2 tsp ground ginger
-1 pinch ground parsley
-sprinkle of salt and pepper
Directions:
In a small bowl, mix your dressing ingredients and set aside.
For this salad, you can use premade smoked duck, rotisserie chicken or smoked tofu. Roughly chop the lettuce and arrange on a bowl. Start assembling your salad by adding the rest of the veggies after cutting them. Top with the protein. Serve with dressing on the side and enjoy.
