Smeraldo Cocktail

Ingredients

FOR THE SIMPLE SYRUP:  

  • 1 cup water 

  • 1 cup sugar or honey or any sweetener of choice 

  • ½ cup borage flowers or dried borage flower


FOR COCKTAIL: 

  • 2 ounces gin 

  • 1 ounce borage simple syrup 

  • ½ ounce freshly squeezed lime juice 

  • 4 ounces tonic water OR soda water


Non-Alcoholic: use ginger beer and soda water or seltzer.


Directions

MAKE YOUR SIMPLE SYRUP: 

  1. In a saucepan, over medium/high heat, bring the water, sugar, and the borage flowers to a simmer. Make sure the sugar is completely dissolved. 

  2. Continue simmering gently for 5 minutes, the reduce the heat and let simmer on low for an additional 5 minutes. 

  3. Remove from the heat and let the liquid cool. 

  4. Strain into a jar or any plastic pitcher. 


PREPARE YOUR COCKTAIL:

  1. Add your gin and borage syrup, lime juice into a cocktail shaker with ice. Shake well. Pour into a glass with ice. 

  2. Top with tonic water. Add some of the borage flowers to garnish, and enjoy.
