Ingredients:
-2 cups diced peaches (white or yellow)
-1 cup quarter cherry tomatoes
-1/3 cup diced radishes
-1/8 cup finely diced red onion
-1 small serrano or jalapeño, finely diced
-1 1/2 tbsp julienned mint, and or rough chopped cilantro
-2 tsp salt or to taste
-juice of one lime
Directions:
Combine all ingredients in a bowl. Use the salsa to top chicken, fish or to eat with chips.
