Ingredients:
-2 cups cooked white rice
-2 cups water
-6 tbsp. rice vinegar
-1/4 cup soy sauce
-1/4 cup oyster sauce (optional)
-1/2 white sugar
-1 can spam (save and clean can)
-5 sheets sushi nori
-2 tbsp. oil, for frying
Directions:
-Slice the spam into about 8-10 slices and put into a ziplock bag. Mix oyster sauce, mirin or rice wine vinegar, soy sauce, and sugar until sugar is dissolved and add to the bag with the spam. Marinate for about 15 minutes.
Remove spam slices from marinade and fry spam on each side over medium heat until slightly crispy. You can glaze the spam with the marinade after frying for extra flavor.
Using the clean spam container as your mold, you can add some cling wrap before assembling you Musubi. Add your rice first to the "mold" pressing down firmly and evenly, so there is about 1-1.5 inches of rice. Then add a slice of the spam. Bringing the sides of the cling wrap together to mold together.
Next, remove from the can. You will have a nice little block of rice and meat to place right on the nori.
Place the nori, shiny part down. Wrap up one side of the nori and stick it to the top of the spam, then wrap up the other side. Just like you are wrapping a package. Use a little water on you finger to seal, if needed. Serve warm.
