Makes 2 sandwiches
Ingredients:
-1 can korean tuna (or any tuna in water), drained
-4 slices of bread (your choice)
-1 hard boiled egg, shelled
-1/4 cup seedless cucumber, chopped
-1/4 cup onion, chopped
-1/4 cup red bell pepper, chopped
-4 cup mayonnaise
-4 leaves of lettuce, washed and pat dry
-1/2 tsp salt
-1/4 tsp ground black pepper
Directions:
Chop the vegetables and set into a mixing bowl. Set aside.
Drain the water/oil from the tuna using a strainer and press the liquid out. Then add into the mixing bowl with the vegetables.
Shell the egg, mash with a fork and then add to the bowl along with the salt, mayonnaise, and ground black pepper. Mix well.
Assemble your sandwich. Cut off the crust to each slice of bread. Add a leaf of lettuce to each piece of bread and divide the tuna mixture onto each slice. Slice and serve!
