INGREDIENTS
4 russet potatoes
1 large onion
1 red bell pepper
1 green bell pepper
2 tsp minced garlic
1 tbsp lightly crushed fennel seeds
2 sprigs fresh rosemary leaves, minced
salt and pepper
1/4 cup olive oil
DIRECTIONS
Preheat oven to 350F.
Peel potatoes. Slice potatoes thinly, then chop the peppers and onions into square chunks.
Layer potatoes on the bottom of a well-greased casserole dish.
Top potatoes with thinly sliced onions, bell peppers, fennel seeds, garlic, rosemary, salt, and black pepper.
Drizzle with olive oil and 2 tablespoons of water.
Bake for 45 minutes, turning potatoes halfway through cooking and continuing to bake until potatoes are tender.
Serve with the steak on top of desire like the boys got. Enjoy!
