Kimpitang

Preparation

Ingredients

For the meat:

-10oz pork, thinly sliced (or beef or tofu)

-1/2 tbsp garlic, minced

-1 tbsp mirin

-salt and pepper, to taste

-oil, for frying


Batter:

-1 cup potato starch (or corn starch)

-1 cup water

-1 egg, lightly beaten (vegan: use flax egg)

-1 tbsp oil


Sauce:

-1 cup water

-2 tbsp soy sauce

-1 tbsp vinegar

-4-7 tbsp sugar

-thickening agent (2 tbsp potato or cornstarch mix with 3 tbsp water)


Vegetables:

-1 carrot, sliced

-1 onion, cut into chunks


For the kimchi:

-1/2 cup kimchi, cut into chunks

-1 tbsp sugar

-2 tbsp ketchup



Directions:

  1. Before we start, it is best to make the tangsuyuk batter by combining the cornstarch (or potato starch) and water in the bowl. Mix them well. Leave it for about an hour (so the starch separates and sink to the bottom of the bowl).

  2. Season the pork with garlic, mirin, salt and pepper. Let it marinade for a few minutes while you get the sauce ready.

  3. Heat 1 tbsp of oil on a pan on medium heat. Add your onions and carrots and let them cook for 6-8 minutes or until they're softened. Add your sauce ingredients and stir well to incorporate (make sure the starch slurry poured in a circular motion and not just dumped).

  4. In a new pan, add the kimchi and sugar and saute for another 3 minutes then add it to the tangsuyuk sauce mixture and stir in some ketchup and kimchi juice. Mix to incorporate and let it simmer for 5 more minutes. Turn it off and let sit.

  5. Heat the oil in a pan.

  6. Gently discard the water from your potato (corn) starch. Add the beaten egg and oil into the starch and make a smooth, thick consistency. Dump your pork (or protein of choice) and mix to coat well. When the oil is hot enough, CAREFULLY, working in batches, start adding your pork pieces one by one making sure not to overcrowd the pan. Cooking for about 4-5 minutes. Remove from oil and let it drain.

  7. Complete your dish, add the fried pork (protein) into the pan with your tangsuyuk sauce and kimchi mixture, mix it well to combine. Top with cheese and let it cook covered for 2-3 minutes or until the cheese is melted. Serve and enjoy!
