Ingredients:
2-4 NY strip steaks
3 tbsp butter
1/4 onion, diced
1 serrano pepper, diced
1/4 cup Karo syrup
1/4 cup BBQ sauce
3 tbsp Worcestershire sauce
1 tbsp basil
2 tbsp pepper
1 tbsp garlic powder
2 tbsp sea salt
1 cup fresh blueberries
Garnish:
blue cheese crumbles
parsley, chopped
Directions:
Melt the butter over medium heat, add onion and serrano, and sauté until translucent. Add the Karo syrup and the blueberries and bring to a boil; reduce the heat to low and simmer for 10 minutes, stirring occasionally.
Season the steaks with salt on both sides; let it sweat for about 15 minutes and rinse. Pat dry.
Preheat the oven to 500F. Meanwhile, heat a cast iron skillet over high heat and drizzle with some olive oil.
Seasoned the steaks with Worcestershire sauce and sear in the skillet for 2 minutes (for medium rare) on each side (3-4 minutes for well done) and SAFELY remove from the oven.
Plate and let it rest for 10 minutes. Once done, top the steaks with the blueberry sauce and garnish with blue cheese and parsley.
**Vegan note: Use seitan or plant-based steak product.
