INGREDIENTS
1/2 pound of seitan or Shiitake mushrooms, sliced, or pinto/black beans
1 tablespoon oil
2 medium white onions, sliced
2-3 (any color) bell peppers, sliced
Steak Marinade:
⅓ cup lime juice
3 tablespoons olive oil
1 tablespoon minced garlic
2 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon red pepper flakes
salt and pepper to taste
¼ cup chopped cilantro
DIRECTIONS
Add all the marinade ingredients to a bowl and stir until well combined. Cover and refrigerate for at least 15-30 minutes, ideally for 2 hours or even overnight. Drain the seitan, don't discard the marinade. Cook the seitan in a skillet over medium-high heat for 5-10 minutes or until golden brown. Set aside.
Add some oil and put in the veggies, salt, and marinade to the skillet. Stir and cook over medium-high heat for 5-10 minutes or until veggies are softened.
Add the cooked seitan to the skillet, stir and cook for 1-2 more minutes. Serve it with warm tortillas and your favorite toppings like JK and Hobi. Enjoy!
