JK's Protein Banana Almond Pudding

Serves: 2

Cooking Time: 15 minutes


Ingredients

Pudding:

  • 1 large ripe banana, sliced (Save a few pieces for garnish)

  • 1 14 oz pack of soft silken tofu (soondubu)

  • 1/4 cup vanilla protein powder

  • 1 tsp almond extract

  • 1-2 tbsp almond milk, as needed

  • 1/2 tbsp sweetener of choice (using is optional)


Topping:

  • 1/4 cup whipping cream + 1 tsp sugar, whipped

  • 2 tbsp toasted almonds

  • few slices of banana


Directions

  1. Prepare 2 glasses to serve the dessert in.

  2. Blend together in a blender- banana slices, tofu, protein powder, almond extract, and sweetener (if using).

  3. Add almond milk in parts to adjust the consistency, as needed. The pudding should be a thick, smooth, batter-like consistency.

  4. Pour the pudding into the prepared glasses, cover, and refrigerate for 1-2 hours.

  5. To serve, top with your whipped cream, banana slices, and toasted almonds. Enjoy!
