Ingredients
Pudding:
1 large ripe banana, sliced (Save a few pieces for garnish)
1 14 oz pack of soft silken tofu (soondubu)
1/4 cup vanilla protein powder
1 tsp almond extract
1-2 tbsp almond milk, as needed
1/2 tbsp sweetener of choice (using is optional)
Topping:
1/4 cup whipping cream + 1 tsp sugar, whipped
2 tbsp toasted almonds
few slices of banana
Directions
Prepare 2 glasses to serve the dessert in.
Blend together in a blender- banana slices, tofu, protein powder, almond extract, and sweetener (if using).
Add almond milk in parts to adjust the consistency, as needed. The pudding should be a thick, smooth, batter-like consistency.
Pour the pudding into the prepared glasses, cover, and refrigerate for 1-2 hours.
To serve, top with your whipped cream, banana slices, and toasted almonds. Enjoy!
