Jin's Room- Cake pops

Prep time: 1 hour

Freeze time: 1 hour, 30 min


Ingredients:

  • 1 box yellow cake mix

  • 1/2 can white frosting

  • 1 cup flavored frosting

  • 12oz white baking chocolate

  • 24 lollipop sticks

  • assorted color rock candy pieces

  • colored sugar (gold and lilac colored)

  • large crystal white decorating sugar

  • gold petal dust (optional)


Directions:

  1. Prepare cake mix according to the package directions. When done, cool the pan on a wire rack. Meanwhile, line the trays or baking sheets with waxed paper and set aside.

  2. Remove the cooled cake from pan and crumble into a very large mixing bowl. Add the desired flavored frosting and beat with an electric mixer on low speed until well-combined. Using a small scoop, form small balls of the mixture about 1 to 1 1/2-inch and place onto prepared trays. Freeze the cake balls for 30 minutes.

  3. In a small microwave-safe dish, heat the candy coating (about 1/4 cup) for 1 minute until melted, take out and stir until smooth. Now, dip one end of each lollipop stick into the melted candy coating and poke the sticks into the cake balls. Freeze for 1 hour so the cake pops are firm.

  4. Chop the chocolate and place it into a small saucepan with the remaining candy coating. Heat over medium-low heat, stirring frequently until everything is smooth and incorporated. Remove from the heat and working one-by-one, dip the cake pops into the melted chocolate mixture. Allow excess chocolate sauce to drip off; place those balls on clean waxed paper-lined trays or baking sheets.

  5. Spoon the white frosting into a freezer bag. Snip off a small part of one corner of the bag. Place colored sugar and white decorating sugar on a small plate, making sure to mix them to spread them nicely. For each pop, carefully cut a slice off of one side. Use a small spoon to scoop out some of the filling and discard. Press large rock candy pieces into a hole on the lollipop. Pipe a small ring on the outer ring of the sliver created with the rock candy and dip into the colored sugar. Pipe another small ring of frosting around the previous ring. Press into the white sugar. Let the cake pops firm in the fridge for about 15-20 minutes and done.

  6. To take it a step further to combine the gold dust and a couple drops of vodka or water until smooth and paint the outlining rock candy pieces gold.
