Ingredients:
-1 lb sliced rice cakes (tteok)
-1 tbsp. soy sauce
-1/2 tbsp. mined garlic
-1 tbsp. black pepper
-1 small onion, diced
-10 stalks green onion (white stalk only)
-1 tbsp. mirin/ rice wine (optional)
-8 cups anchovy stock
-toasted seaweed crumbles
-1 green onion, sliced
-2 eggs
-1 tsp oil
-1/2 lb beef stew meat (optional)
*Beef marinade ingredients:
-4 tsp soy sauce
-4 tsp sugar
-1 tbsp. mirin
-1 tbsp. sesame oil
-2 cloves garlic, minced
-1/2 tsp ground black pepper
Directions:
-Cut the beef into strips, add into a bag or mixing bowl along with the marinade ingredients and let rest.
-Soak tteok in water for 15 minutes, drain and set aside.
-In a large pot, add your anchovy stick, pepper, onions, green onion stalks, and mirin. Bring to a boil.
-Reduce to medium heat, and let it cook uncovered for 10 minutes.
-Take beef from marinade, and add it to a pan with 2 tbsp. oil on medium heat till cooked through.
-Add remaining ingredients into the pot with the vegetables and stock. The tteok will only need about 2-3 minutes to soften. Enjoy hot!
