Ingredients:
-1/2 cup white sugar
-1/2 cup of water
-1 cup strawberries, quartered
-1 cup ice
-1 bottle of seltzer water or sparkling water of choice
-1 sprig of mint
Directions:
*Syrup:
Combine the water and sugar into a saucepan over medium heat and stir until dissolved.
Mix the strawberries into the saucepan and bring to a boil. Boil it for about 7 minutes, making sure to stir the mixture. You can give the pan a slight shake every now and then, however be sure to keep a close eye on it.
Reduce the heat to medium low and simmer until the strawberries are mushy and the sauce is thick.
If you would like a thin syrup, you can strain the liquid into a bowl or bottle for pouring. If you would like a thicker syrup, leave the mixture as is and spoon into a bottle/jar. Refrigerate until cold. The syrup will continue to thicken while chilling.
*Drink:
Spoon 2 tbsp of strawberry syrup into a long glass/small jug. Fill the cup up with ice.
Add the seltzer/sparkling water.
Lightly roll the mint sprig between your hands, it will allow for the oils to be released more easily, and add to your cup. Gently stir in the strawberry syrup and Enjoy!
(Don't have time to make the syrup? Replace it with 2 tbsp of store bought syrup. However the flavor will not be the same. Also, try adding your favorite vodka or gin if you want to feel a bit more jazzy!)
