Ingredients
2 slices of bread (white, whole grain, or gluten free)
strawberry jam (or your flavor of choice)
2 tbsp butter, plus more for the toast
2 eggs
salt and pepper
2 slices of bacon (type of meat or substitute of choice)
Directions
To a pan, add your bacon and cook until crispy. Then set them aside on a paper towel to absorb excess oil.
In a bowl, lightly beat your eggs with 3/4 tsp salt and a few grinds of black pepper.
Melt 1 tbsp of the butter in a medium nonstick skillet over low heat. Swirl to coat the bottom and sides. Add the eggs, and cook slowly, scraping them with a rubber spatula occasionally so they do not burn and cook evenly, until they have thickened and are soft, about 10 minutes. If you like your eggs a little firmer, cook them for an additional 2-3 minutes.
Remove them from the heat and gently fold in the remaining 1 tbsp of butter.
Toast your bread to desired doneness.
To serve
Assemble your Hobi toast by coating one of the slices of toast with butter then jam. Add about 2 tbsp of scrambled eggs and then top with bacon and enjoy!
Vegan option
Vegan egg scramble
8oz firm tofu
1/4 tsp salt
1/4 tsp turmeric powder
1/8 tsp ground black pepper
Directions
Chop the tofu and use a form to crumble it into bite-sized pieces.
Add some oil to a frying pan when its hot, and add the tofu and all seasonings. Stir until well combined and cook over medium-high heat for 5-10 minutes, stirring occasionally.
You can also use JustEggs or any egg substitute.
