Ingredients
2 premade croissant dough
granulated sugar
To serve
apricot goat cheese
blueberry or wild berry goat cheese
vanilla ice cream (or any flavor you like. Hobi used Haagen-Dazs)
maple syrup
fresh fruits, cut (he used bananas and tangerines
Directions:
Preheat the waffle maker to medium heat.
Roll up the croissant dough into crescent shapes
Roll the crescents in sugar and cook it in the waffle maker until they are cooked through, keeping an eye that the sugar doesn't burn.
To serve: On a plate, place one of the croffles top with a few slices of apricot goat cheese, and add the other croffle on top. Add a small slice of the blueberry/wild berry goat cheese.
Add a scoop of ice cream. On the side, place your cut fruits and drizzle them with some maple syrup and enjoy!!
Vegan option:
To create your fruity goat cheese, use Spero alternative goat cheese or any alternatives you find:
To a dollop of the vegan goat cheese, add about 1 tsp of either wild berry or blueberry preserves or jam (vegan friendly). Mix well until it's incorporated. Do the same to make the apricot kind with apricot preserves or jam.
Use any sliced cheese alternatives and vegan friendly vanilla ice cream (or flavor of choice).
Note: can't find pre-made croissant dough? Use the already baked, ready-to-eat kind. Roll it in the sugar the best you can (you can use your finger, wetted with water and lightly moisten the outside of the croissant to get the sugar to stick better) and add it to the waffle maker. Top with the serving ingredients and done!
