Ingredients:
-12 long green chili peppers
-12 pieces of lumpia or spring roll wrappers
-3 oz cheddar cheese
-1/2 lb ground chicken, beef or pork
-1 small onion, chopped
-4 cloves garlic, minced
-salt and pepper, to taste
-2 cups cooking oil, for frying
Directions:
Prepare the filling by heating oil in a pan. Saute the onion and garlic. Once they're softened, add your choice of meat (or mushrooms as meat substitute) and saute until cooked through (no pink visible). Season with salt and pepper. Remove from the pan and let cool.
Open the chili peppers by slicing one side, lengthwise from top to bottom. Scrape out the seeds and spine.
Stuff the cooked meat into each pepper and top with cheese. Wrap each stuffed pepper in lumpia wrapper. Do this by laying the wrapper flat on a wide plate. Place the stuffed pepper on the lower part of the wrapper then roll up gently and gradually. Fold the side opposite to the stem end inwards to secure the pepper and then continue to roll throughout. Seal by brushing the end of the wrapper with water and then press against the lumpia to secure. Set aside.
Heat oil in a pan and deep fry each lumpia on medium-high heat (make sure oil is to temperature before frying) until the wrapper turns golden brown in color. Remove once done and place on a paper towel-lined plate to remove excess oil. Serve with mayo-ketchup, soy sauce or sweet and sour sauce.
