Ingredients:
*For chicken:
-1/2 lb chicken breasts
-1/2 tsp sugar
-1/2 tsp paprika
-1/2 tsp salt
-1/2 tsp black pepper
-1/2 tsp cayenne
*For coating mixture:
-1/2 cup cornstarch
-1 egg
*For dynamite Sauce:
-3/4 cup mayonnaise
-2 tsp lemon juice
-5tbsp sriracha
-1 tsp honey
Directions:
Pat the chicken breasts with paper towels then cut into 1-inch cubes. Plate the cubed chicken in a bowl. Add the salt, sugar, black pepper, paprika and cayenne and mix well. Cover the bowl and let marinade in the refrigerator for 30 minutes.
Heat oil in a wok or frying pan.
Take the chicken pieces out of the fridge and add the egg. Mix well.
Add in starch and mix well to make a pasty batter.
Fry the chicken at 350F (do not overcrowd the pan, so fry in batches if necessary) until lightly browned and cooked through, for about 4-5 minutes.
In a large mixing bowl, stir together all the sauce ingredients. Add the cooked chicken and coat each piece. Serve over lettuce or rice. Garnish with chopped scallions and serve. Enjoy!
