Ingredients:
-1 cup self-rising flour
-1 tsp sugar
-1 tsp salt
-1/2 tsp pepper
-2 eggs, beaten
-1 1/2 cup fresh corn (off the cob)
-1/2 cup milk
-2 tsp vegetable oil
-vegetable oil for frying
Directions:
Combine first 4 ingredients in a large mixing bowl, mix well and set aside. Combine eggs, corn, milk, and 2 tsp vegetable oil and mix well. Combine the 2 mixtures together.
Drop mixture by rounded tsp into vegetable oil heated to 375F, and cook until golden for about 4-5 minutes (turning once). Serve top and top with sour cream or any other topping you like and enjoy!
*Note: to make vegan, substitute the eggs and milk
