Cold Soybean Noodles

Servings: 2-4


Ingredients:

  • 1 cup/ 200g dried soybeans, soaked in cold water overnight

  • 2 tbsp/ 22g mixed nuts (no peanuts or pine nuts), optional

  • 1 cup/ 200g somyeon noodles

  • 1 1/2 tbsp/ 5.5mL salt

  • cucumber and toasted sesame seeds, for garnish

  • ice, optional

Directions:

  1. Transfer soaked soybeans to a pot and add enough water to cover. Bring to a boil and cook for 10 minutes and then drain and rinse well under running water.

  2. Cut the cucumbers into matchsticks and set them aside.

  3. Combine the soybeans, nuts, and 2 cups/ 478mL of water in a blender and blend until everything is smooth. You can also add more water as you go to achieve the desired consistency.

  4. In a bowl, place the noodles in the center and add the soybean puree around it. Top with cucumbers, ice, and toasted sesame seeds, and serve with salt on the side. You can also add spice or fruits to the dish as well. Enjoy!

Note: A quicker way would be to add COLD unsweetened milk into the bowls of noodles and garnish with the cucumber and toasted sesame seeds.
