Ingredients:
10-20 small potatoes
vegetable oil
1/2 tsp salt
1/4 tsp pepper
2 tbsp fresh parsley, chopped
Directions:
In a large pot of boiling water, cook the potatoes for 12-15 min or until tender. Check by pressing a fork through them. (The fork should be able to slide right into the potato).
Drain into a pan at medium heat. Add the potatoes and toss with oil, salt, pepper and parsley. Garnish with a sprinkle of parsley and serve. Enjoy!
