Ingredients:
-1 tbsp brown butter
-1/2 cup peach puree
-3-4 scoops vanilla ice cream
-1/3 cup milk
-2 tsp sugar, if desired
-whipped cream
Directions:
In a pan, brown the butter and make the peach puree. Mix together while still warm and let cool completely.
Add the peach puree with brown butter, ice cream and milk together in a blender and blend until smooth. (You can add a bit more sugar to the peach puree if desired). Pour into a glass, top with whipped cream and enjoy.
To make the peach puree: Heat 1 cup of diced peaches, 1 tbsp lemon juice, 1 tbsp water, and 1 tbsp white sugar to a sauce pan over medium heat. Bring to a boil and let it simmer for 5 minutes, stirring frequently. Remove from heat and let cool. Blend in a blender until smooth. Use as much as you need for the recipe and save the rest.
Vegan note: Use vegan butter, your choice of plant or dairy free milk, vegan whipped cream and vanilla ice cream.
Lactose note: You can use lactaid vanilla ice cream and milk or your choice of dairy free products.
Allergen/other: If allergic to peaches, you can use mango or another fruit that will add a tartness to the sweetness to the ice cream. If you are watching your sugar intake, use alternatives like agave or syrups that will work.
