Ingredients:
-2 cups plain yogurt
-4 cups fresh blueberries
-3-4 tbsp honey or more to taste
-1/2 tsp lemon zest
-2tbsp lemon juice
-pinch of salt
Directions:
Pick through your blueberries and discard any that may be bad, remove any stems and wash to remove debris. In a medium saucepan, combine the blueberries, honey, lemon zest and lemon juice, and salt. Bring the mixture to a gentle simmer, stirring occasionally, for 15 minutes.
Refrigerate the blueberry mixture until it's completely chilled. *You can expedite this process by placing it in the freezer, stirring every 10 minutes, for 15 minutes.
Mix together your chilled blueberry mixture and chilled yogurt by placing them into a high speed blender, starting with the yogurt. Blend using a tamper tool to push everything towards the blades, until it's smooth and creamy. Don't blend for too long or the yogurt will separate. Transfer the yogurt to a loaf pan (about 9"x5" or larger) and freeze. Enjoy!
