Serves 4-6
Ingredients:
-1/2 cup fine granulated sugar
-1 cup blueberries
-6 cups water
-3/4 cup freshly squeezed lemon juice
-mint leaves and lemon slices, for garnish
Directions:
To make blueberry simple syrup: In a medium saucepan over medium heat, combine sugar and 1 cup water, stirring until the sugar has dissolved.
Add in the blueberries and bring to a boil. Reduce the heat and simmer for 4 minutes, or until the blueberries have broken down. Strain the mixture through a sieve and let cool.
In a large pitcher, whisk together blueberry simple syrup, lemon juice, and 5 cups of water. Place in the refrigerator until chilled. Use a chilled glass, add ice and blueberries, and pour in the lemonade. Garnish with lemon slices and mint. Enjoy!
