2 tbsp of light soy sauce
4 stalks of spring onion
1/2 cup of water
2 tbsp of Chinese cooking wine or mirin
1 tbsp of sesame oil
DIRECTIONS
Clean beef and pat dry. Cut beef into thin slices. Add the marinade ingredients, mix well and refrigerate for 20 minutes.
Prepare your sauce by adding sauce ingredients into a small bowl mixing well and set it aside until needed.
Heat up some oil in a pan over high heat. Once heated, add in the beef and quickly stir-fry it for 30 sec or until about halfway cooked. Quickly transfer to a plate.
Heat up 2 tbsp of oil over high heat, then add in the ginger slices. Fry for 1 min or until aromatic. Then add in the spring onions and stir fry, mixing well. Do not overcook the spring onions.
Add the beef back with the sauce to the pan and mix until the sauce coats well.
Next, add 1 tbsp of Rice Wine or rice vinegar. After the gravy thickens, transfer it to a plate. Serve hot with steamed rice and veggies. You can also use lettuce to make beef wraps, Enjoy!
