Bang PD's Salmon

Prep time: 5 minutes

Cook time: 15 minutes


Ingredients:

-2 salmon fillets

-2 oz prosciutto, diced (cured ham, optional)

-1/2 onion, chopped

-dill, to garnish


*Sauce:

-1tbsp olive oil

-1 tbsp butter

-2 cloves garlic, minced

-1 cup heavy cream

-1 tbsp lemon juice + 1 tsp lemon (optional)

-1 tsp salt

-1/4 tsp pepper

-2 tbsp chopped dill


Directions:

  1. Add the salmon, skin-side down and cook for 2 minutes. Turn the salmon and cook for another 2 minutes, until lightly browned. Flip once again so it's skin side down. Remove from the pan and set aside.

  2. Make the sauce: In a sauce pan on medium heat, heat the olive oil. Add the chopped prosciutto and onions and cook until lightly brown and caramelized, about 2-3 minutes.

  3. Add the melted butter and garlic and saute for 30-45 seconds. Add the cream, lemon juice, salt and pepper. Stir all together and let simmer for 3-4 minutes, until slightly reduced. Removed from the heat and stir in the dill and lemon zest (if using).

  4. Plate the fillets and drizzle the sauce over the top. Garnish with some dill and enjoy!
