Ingredients:
200g all-purpose flour
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp fine salt
50g caster sugar
160 mL water
160 mL full cream milk
1 egg
40g melted butter
Filling (for 1 apam balik):
1 tbsp granulated sugar
1 tbsp butter
1 tbsp chopped peanuts (toasted) or coarse peanut butter
condensed milk (optional)
chocolate chips (optional)
grated processed cheddar cheese (optional)
Directions:
Mix all ingredients into one bowl and whisk until smooth. Make sure there are no lumps.
Cover the bowl with plastic wrap, touching the top of the dough and let it rest for at least 5 hours to overnight.
Grease a non-stick pan and heat it up with medium heat.
Pour in 1/2-1 ladle of dough into the pan. Make sure to spread the dough to the sides of the pan so it will be crispy when it's done.
When the dough starts bubbling, sprinkle granulated sugar and spread the butter. Cover the pan until the dough is cooked.
Take off of the heat, sprinkle toasted chopped peanuts or your choice of filling and fold in half.
Enjoy your apam balik while its warm.
